Raw material fish: size 40-80gram per pcs or 80-125gram per pcs.
refrigerate: add ice or ice water with salt keep the temperature stable instead of pour the fish into ice water,because it might distrub the judgement of freshness.
Check: watch fish surface has any changes or not,fish body soft or not,or turn yellow,and confirm the botom and top of bucket's temperature same or not
Inspectation:successive smapling,slit the fish and check the meat's freshness and smell,throw whole plate as long as find 1 bad fish
Cut:start from head,cut along the gill and pectoral,scale of gut completely,and then,cut tail.
Select: separate into 3 standards:7-9cm(around 31-45g),9-11cm(around 45-60g),and some 4-7cm(around 20-30g)
