The analysis results of the gastric contents of Sthenoteuthis oualaniensis in western Taiwan, my country showed that they ingested very little during the breeding period, the average weight of the gastric contents was generally 1-3 grams, and the empty stomach rate was high. The females had 62% empty stomach, 34% had little stomach contents, and 4% had full food; males had 67% empty stomach, 30% had little stomach contents, and 3% had full food.

Moisture, crude fat, crude protein and ash in the carcass of Sthenoteuthis oualaiensis were 80.50%, 0.49%, 17.24% and 1.37%, respectively. The water, fat, protein and ash content of the head and foot were 80.73%, 0.87%, 16.68% and 2.88%, respectively, which was a high-protein and low-fat aquatic product. Sthenoteuthis oualaniensis is rich in amino acids, accounting for 14.05% (carcass) and 15.10% (head and feet) of the total fresh samples, of which the essential amino acids (EAA) account for 40.89% (carcass) and 40.11% (head feet) of the total amino acids. The umami amino acids accounted for 45.89% (carcass) and 46.51% (head and foot), and the essential amino acid index was 79.56 (carcass) and 75.46 (head and foot).
The content of unsaturated fatty acids in Sthenoteuthis oualaniensis is relatively high, accounting for 49.90% (carcass) and 54.55% (head and foot) of the total fatty acid, of which the mass fractions of EPA and DHA are 6.9% (carcass), 5.67% (head and foot) and 15.26%, respectively. % (carcass), 22.08% (head and foot), Sthenoteuthis oualaniensis has higher nutritional value and health care effect, and has a better development prospect.
